Prep time: 15 minutes
Cook time: 55-60 minutes
Materials:
- 1 lb. ground turkey
- 2 cups butternut squash cubed
- 1 large onion chopped
- 4 garlic cloves minced
- 2 bell peppers chopped
- 1-2 jalapeños (depending on spice level) diced
- 6 oz tomato paste
- 2 15 oz cans black beans
- 1 can diced tomatoes w/ chilis
- 1 cup chicken stock
- 1 tsp sugar
- 1 tbsp chili powder
- 1 tsp marjoram
- 1 tsp oregano
- 1/4-1 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp. olive oil
Process:
- In a soup pot over medium/ high heat add in the olive oil and onion. Stirring often cook the onion until soft and translucent, about 3-4 minutes.
- Add in both peppers and cook for an additional 2-3 minutes.
- Add in the garlic and cook until fragrant, about 60 seconds.
- Add in the ground turkey and cook, breaking the turkey up with a wooden spoon, for 5-6 minutes or until turkey is cooked through.
- Add in the tomato paste and mix to incorporate.
- Once mixed in add in the chicken stock and diced tomatoes/ chilis. Mix well.
- Add in the butternut squash and black beans. Mix well to incorporate.
- Season with sugar, chili powder, marjoram, oregano, cayenne pepper, salt and pepper. Mix well.
- Cover and simmer for 45-50 minutes, making sure to stir the mixture every 5 minutes or so.
- Plate and ENJOY!
