Caramel Apple Muffins

Prep time: 15 minutes

Cook time: 18-20 minutes

Materials:

  • 2 large apples cubed and tossed with 1 tsp cinnamon
  • 2 cups flour
  • 1 tbsp. baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup sugar
  • Pinch of salt
  • 1/2 cup whole milk
  • 1/2 cup neutral oil
  • 2 large eggs
  • 1 tbsp. vanilla extract
  • 1/2- 3/4 cup caramel sauce

Process:

  1. Preheat the oven 375 degrees F and line a muffin tin with some liners. Set aside.
  2. In a small bowl add in the apples and 1 tsp cinnamon. Mix well and set aside.
  3. In another medium sized mixing bowl combine the flour, baking powder, cinnamon, nutmeg, sugar and salt. Mix roughly and set aside.
  4. In another bowl add in the whole milk, neutral oil, eggs and vanilla extract. Mix well to incorporate all the ingredients.
  5. Add in the dry ingredients to the wet and mix well to incorporate.
  6. Fold in the cinnamon apples.
  7. Scoop in the batter halfway into the cupcake liners. Place a dollop of your caramel sauce over the batter and then add in another scoop of batter over the caramel sauce.
  8. Bake the muffins for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let the muffins cool completely.
  9. Drizzle with additional caramel, plate and serve.
