Materials:
- 2 large apples cubed and tossed with 1 tsp cinnamon
- 2 cups flour
- 1 tbsp. baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup sugar
- Pinch of salt
- 1/2 cup whole milk
- 1/2 cup neutral oil
- 2 large eggs
- 1 tbsp. vanilla extract
- 1/2- 3/4 cup caramel sauce
Process:
- Preheat the oven 375 degrees F and line a muffin tin with some liners. Set aside.
- In a small bowl add in the apples and 1 tsp cinnamon. Mix well and set aside.
- In another medium sized mixing bowl combine the flour, baking powder, cinnamon, nutmeg, sugar and salt. Mix roughly and set aside.
- In another bowl add in the whole milk, neutral oil, eggs and vanilla extract. Mix well to incorporate all the ingredients.
- Add in the dry ingredients to the wet and mix well to incorporate.
- Fold in the cinnamon apples.
- Scoop in the batter halfway into the cupcake liners. Place a dollop of your caramel sauce over the batter and then add in another scoop of batter over the caramel sauce.
- Bake the muffins for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let the muffins cool completely.
- Drizzle with additional caramel, plate and serve.
