Prep time: 15 minutes
Cook time: 26-30 minutes
Materials:
- 1 lb. ground chicken
- 3 garlic cloves minced
- 1/4 cup breadcrumbs
- 1/4 cup Parmesan cheese
- 1/2 cup mozzarella cheese divided
- 1 large egg
- 2 cups marinara sauce
- 1 tsp oregano
- 1 tsp basil
- Salt and pepper to taste
Process:
- Preheat the oven to 400 degrees F and line a baking sheet with some parchment paper. Set aside.
- In a medium sized mixing bowl combine ground chicken, garlic, breadcrumbs, Parmesan cheese, 1/4 cup mozzarella cheese, egg, oregano, basil, salt and pepper. Mix just enough to combine but not too much so that you don’t get a tough meatball.
- Using a small ice cream scoop start to form your meatballs and place the meatballs on your baking sheet.
- Bake the meatballs for 18-20 minutes.
- In a small casserole dish spread a layer of marinara sauce, just enough to coat the bottom.
- Place the cooked meatballs in the casserole dish and top with the remaining marinara sauce.
- Top with the remaining mozzarella cheese and a sprinkle of parmesan cheese (to taste).
- Bake an additional 8-10 minutes.
- Serve over pasta, on bread or on it’s own. ENJOY!
