Chicken Parmesan Meatballs

Prep time: 15 minutes

Cook time: 26-30 minutes

Materials:

  • 1 lb. ground chicken
  • 3 garlic cloves minced
  • 1/4 cup breadcrumbs
  • 1/4 cup Parmesan cheese
  • 1/2 cup mozzarella cheese divided
  • 1 large egg
  • 2 cups marinara sauce
  • 1 tsp oregano
  • 1 tsp basil
  • Salt and pepper to taste

Process:

  1. Preheat the oven to 400 degrees F and line a baking sheet with some parchment paper. Set aside.
  2. In a medium sized mixing bowl combine ground chicken, garlic, breadcrumbs, Parmesan cheese, 1/4 cup mozzarella cheese, egg, oregano, basil, salt and pepper. Mix just enough to combine but not too much so that you don’t get a tough meatball.
  3. Using a small ice cream scoop start to form your meatballs and place the meatballs on your baking sheet.
  4. Bake the meatballs for 18-20 minutes.
  5. In a small casserole dish spread a layer of marinara sauce, just enough to coat the bottom.
  6. Place the cooked meatballs in the casserole dish and top with the remaining marinara sauce.
  7. Top with the remaining mozzarella cheese and a sprinkle of parmesan cheese (to taste).
  8. Bake an additional 8-10 minutes.
  9. Serve over pasta, on bread or on it’s own. ENJOY!
