Cheeseburger Soup

Prep time: 15 minutes

Cook time: 4.5-6.5 hours

Materials:

  • 1 lb. ground beef
  • 6-7 potatoes cubed
  • 1 onion chopped
  • 6 cups beef broth
  • 1 cup cheddar cheese (additional for topping)
  • 1/4 cup heavy cream
  • 2 tsp oregano (separated)
  • 2 tsp marjoram (separated)
  • 2 tsp garlic powder (separated)
  • 1 tsp onion powder (separated)
  • 1 tbsp. paprika
  • Salt and pepper to taste
  • 2 tbsp. neutral oil

Process:

  1. In a large skillet add in the neutral oil. Keeping the heat on medium/ high add in the ground beef.
  2. Cook the beef breaking it up with a wooden spoon until the ground beef is fully cooked through, about 3-5 minutes.
  3. Discard any of the fat that the beef has rendered.
  4. Season with salt, pepper, 1 tsp oregano, 1 tsp marjoram, 1 tsp garlic powder and 1/2 tsp onion powder. Mix well and set aside.
  5. In the insert of a slow cooker add in the potatoes, onion, cooked beef, beef broth, 1 tsp oregano, 1 tsp marjoram, 1 tsp garlic powder, 1/2 tsp onion powdered, salt and pepper. Mix well and place into your slow cooker.
  6. Cook 4 hours on high or 6 hours on low.
  7. After the 4 or 6 hours add in the heavy cream and cheddar cheese. Mix well and let cook for an additional 10 minutes.
  8. Now you are ready to plate, and enjoy!
