Potato Skins

Prep time: 20 minutes

Cook time: 60-70 minutes

Please don’t throw the inside of the potatoes out. You can use as a cooks treat or a separate dish. Place in a casserole dish and bake with some salt, pepper, garlic powder and onion powder until fully cooked through. Top with some cheddar cheese and enjoy. Now let’s get to the recipe.

Materials:

  • 5 Russet potatoes washed and scrubbed
  • 3-4 slices bacon
  • 1/2 cup cheddar cheese
  • Green onions to taste
  • Sour cream to taste
  • 3 tbsp. neutral oil
  • Salt and pepper to taste

Process:

  1. Preheat the oven to 425 degrees F and line a baking sheet with some parchment paper.
  2. Place the potatoes on the baking sheet and using a fork carefully puncture the potatoes all around.
  3. Coat with 2 tbsp. of oil and season with salt and pepper on all sides.
  4. Bake 25-30 minutes.
  5. While the potatoes are baking crisp up your bacon. Set aside.
  6. Remove the potatoes from the oven and very carefully cut the potatoes in half length wise.
  7. Scoop out the inside of the potatoes leaving about an 1/2 inch border of potato on the bottom. Please don’t toss the inside of the potatoes (see note above).
  8. Drizzle the inside of the potatoes with the remaining oil and season with additional salt and pepper.
  9. Bake for an additional 25-30 minutes.
  10. Remove the potatoes from the oven and top with cheese. Bake an additional 3-5 minutes or until the cheese is melted.
  11. Remove from oven and top with sour cream, bacon and green onions.
  12. Plate and ENJOY!

    These sound wonderful. I’m a vegetarian so I’ll just omit the bacon.
