Tater Tot Casserole Cups

Materials:

  • 1 bag (28 oz) tater tots
  • 1 tbsp. garlic powder
  • 1 tbsp. paprika
  • 1 tsp oregano
  • 1 tsp parsley
  • 1 tsp marjoram
  • Salt and pepper to taste
  • 4-5 slices bacon crumbled
  • 1 tbsp. unsalted butter
  • 1 tbsp. flour
  • 1/2 cup whole milk
  • 1/2 cup cheddar cheese
  • Sour cream
  • Green onions diced

Process:

  1. Preheat the oven to what directions state on bag of tater tots and line a large baking sheet with some parchment paper.
  2. Pour the tater tots onto the baking sheet in a single layer and season with salt, pepper, garlic powder, paprika, oregano, parsley and marjoram.
  3. Toss them slightly to coat the tater tots and then bake according to directions on tater tot bag.
  4. In the meantime fry up your bacon and place on a paper towel lined plate to absorb some of the grease. Set aside.
  5. In a small sauce pan over medium/ high heat add in the unsalted butter. Once the butter has melted add in the flour and cook for 60-90 seconds, stirring constantly.
  6. Add in the whole milk and cook stirring often until the mixture has thickened.
  7. Lower the heat to low and add in the cheese. Mix well until the cheese has melted and mixture is fully combined. Remove from heat.
  8. To assemble the cups place a layer of tater tots and top with melted cheese. Continue this until you reach the top. Layers will depend on how big your cups are.
  9. Once the cups are full finish off with a layer of cheese and then top with sour cream, cooked bacon and green onions.
  10. Serve and ENJOY!
