Prep time: 15 minutes
Cook time: 45-50 minutes
Materials:
- 1 ½ cups flour
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- ¾ cup granulated sugar
- 2 large eggs
- ½ cup mascarpone cheese softened at room temperature
- ½ cup unsalted butter melted and cooled
- 1 tbsp. vanilla extract
- Zest of 1 lemon
- Juice of ½ lemon (about 2 tbsp.) additional 2-3 tbsp. for glaze
- 1/2 cup powdered sugar
Process:
- Preheat the oven to 350 degrees F and line a loaf pan (9×5 inch) with some parchment paper.
- In a medium sized mixing bowl combine the flour, baking soda, baking powder and salt. Mix and set aside.
- In a separate mixing bowl add in the granulated sugar and eggs.
- Add in the mascarpone cheese and mix until smooth.
- Slowly start to add in the melted butter.
- Add in the vanilla and lemon juice. Once incorporated add in the zest of one lemon. Mix well.
- Add in the dry ingredients and mix to combine. If the dough is tough switch from a whisk to a spatula.
- Pour the dough into your prepared pan and level off.
- Bake 40-50 minutes or until a toothpick inserted into the center comes out clean.
- Let cool completely.
- In a small mixing bowl combine the powdered sugar and 2-3 tbsp. lemon juice.
- Pour the glaze over the loaf and let set for bit.
- Plate, slice and ENJOY with a delicious cup of coffee.
