Lemon Loaf

Prep time: 15 minutes

Cook time: 45-50 minutes

Materials:

  • 1 ½ cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup mascarpone cheese softened at room temperature
  • ½ cup unsalted butter melted and cooled
  • 1 tbsp. vanilla extract
  • Zest of 1 lemon
  • Juice of ½ lemon (about 2 tbsp.) additional 2-3 tbsp. for glaze
  • 1/2 cup powdered sugar

Process:

  1. Preheat the oven to 350 degrees F and line a loaf pan (9×5 inch) with some parchment paper.
  2. In a medium sized mixing bowl combine the flour, baking soda, baking powder and salt. Mix and set aside.
  3. In a separate mixing bowl add in the granulated sugar and eggs.
  4. Add in the mascarpone cheese and mix until smooth.
  5. Slowly start to add in the melted butter.
  6. Add in the vanilla and lemon juice. Once incorporated add in the zest of one lemon. Mix well.
  7. Add in the dry ingredients and mix to combine. If the dough is tough switch from a whisk to a spatula.
  8. Pour the dough into your prepared pan and level off.
  9. Bake 40-50 minutes or until a toothpick inserted into the center comes out clean.
  10. Let cool completely.
  11. In a small mixing bowl combine the powdered sugar and 2-3 tbsp. lemon juice.
  12. Pour the glaze over the loaf and let set for bit.
  13. Plate, slice and ENJOY with a delicious cup of coffee.
