Prep time: 10 minutes
Cook time: 50-55 minutes
Materials:
- 1 pie crust (store bought is great)
- 14 oz. sweetened condensed milk
- 3/4 cup whole milk
- 1/4 cup water
- 3 large eggs
- 1 tbsp. vanilla extract
- 1 cup unsweetened coconut flakes
Process:
- Preheat the oven to 400 degrees F.
- Grease a pie plate with unsalted butter and add in the pie crust. Smooth out the pie crust and then taking a fork poke the crust a few times.
- Bake for 10 minutes.
- In the meantime add the sweetened condensed milk, whole milk, water, eggs and vanilla into a high powered blender.
- Mix for 60-90 seconds until the condensed milk is incorporated and you have one smooth mixture.
- Add in the coconut flakes and mix just long enough to incorporate, about 15 seconds or so.
- At this point the 10 minutes should be up and you are able to pour the mixture into your pie crust. Just be extremely careful as the pie plate will be hot.
- Place back in the oven and lower the heat to 350 degrees F. Bake for 40-45 minutes or until the center is set and no longer jiggles.
- Let cool completely before cutting in.
- Plate and ENJOY!
