Materials:
- Tea biscuits of your choice (amounts will vary depending on size)
- 1/4 cup fresh lime juice
- 1 (12 oz.) can evaporated milk
- 1 (14 oz.) can sweetened condensed milk
- Raspberries to taste
- Lime zest
- Pinch of salt
Process:
- In a high level blender add in fresh lime juice, evaporated milk, sweetened condensed milk and pinch of salt. Blend until fully incorporated.
- In a bowl or dish with high sides place a layer of tea biscuits on the bottom, making sure to cover the bottom fully.
- Pour 1/3 of the mixture over the tea biscuits.
- Top with desired amount of raspberries and some lime zest.
- Top with another layer of biscuits, 1/3 of the lime mixture, raspberries and lime zest.
- Top for the last time with tea biscuits and pour in the remaining lime mixture.
- Top with raspberries and lime zest.
- Cover tightly with plastic wrap and refrigerate for a minimum of 8 hours.
- Plate and ENJOY!
