Pork Chop & Potato Sheet Pan Meal

Prep time: 30-40 minutes

Cook time: 15-20 minutes

Potato Materials:

  • 1 lb. baby potatoes halved
  • 2 tbsp. olive oil
  • 2 tbsp. grated Parmesan cheese
  • 1 tsp dried parsley
  • 1/2 tsp Herbes De Provence
  • Salt and pepper to taste

Pork Chop Materials:

  • 6-8 thinly sliced pork chops
  • 1/2 cup unsalted butter softened
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1/2 tsp Herbes De Provence
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Process:

  1. Preheat the oven to 350 degrees F and line a baking sheet with some aluminum foil or parchment paper. Set aside.
  2. In a mixing bowl combine the potatoes, olive oil, grated Parmesan, dried parsley, Herbes De Provence, salt and pepper. Mix well and pour onto the greased baking sheet.
  3. In a small mixing bowl combine the softened butter, garlic powder, dried parsley, Herbes De Provence, salt, pepper and grated Parmesan. Mix well to combine and form a paste.
  4. Using half of the mixture cover one side of the pork chops.
  5. Place the buttered pork chop (buttered side down) on the baking sheet.
  6. Using the remainder of the butter, cover the unbuttered side of the pork chop.
  7. Bake 30-40 minutes, or until porkchops and potatoes are fully cooked through, flipping pork chops halfway through.
  8. Plate and ENJOY!
