Cook time: 15-20 minutes
Potato Materials:
- 1 lb. baby potatoes halved
- 2 tbsp. olive oil
- 2 tbsp. grated Parmesan cheese
- 1 tsp dried parsley
- 1/2 tsp Herbes De Provence
- Salt and pepper to taste
Pork Chop Materials:
- 6-8 thinly sliced pork chops
- 1/2 cup unsalted butter softened
- 1 tsp garlic powder
- 1 tsp dried parsley
- 1/2 tsp Herbes De Provence
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Process:
- Preheat the oven to 350 degrees F and line a baking sheet with some aluminum foil or parchment paper. Set aside.
- In a mixing bowl combine the potatoes, olive oil, grated Parmesan, dried parsley, Herbes De Provence, salt and pepper. Mix well and pour onto the greased baking sheet.
- In a small mixing bowl combine the softened butter, garlic powder, dried parsley, Herbes De Provence, salt, pepper and grated Parmesan. Mix well to combine and form a paste.
- Using half of the mixture cover one side of the pork chops.
- Place the buttered pork chop (buttered side down) on the baking sheet.
- Using the remainder of the butter, cover the unbuttered side of the pork chop.
- Bake 30-40 minutes, or until porkchops and potatoes are fully cooked through, flipping pork chops halfway through.
- Plate and ENJOY!
