Mini Strawberry Shortcakes

Prep time: 15-20 minutes

Cook time: 5-8 minutes

Materials:

  • 2 cups chopped strawberries
  • 1/3 cup granulated sugar
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/3 cup softened mascarpone cheese
  • 12 store bought vanilla cake shells

Process:

  1. In a small sauce pan add in the chopped strawberries and granulated sugar.
  2. Cook over medium heat for 5-8 minutes, stirring often, until the strawberries have softened and released some of the juices.
  3. Remove from heat and set aside to cool completely.
  4. In a medium sized mixing bowl add in the heave whipping cream.
  5. Using a hand held mixer start to mix until frothy and then add in the powdered sugar.
  6. Mix until the cream becomes velvety and thickened.
  7. Add in the softened mascarpone cheese and continue to mix until stiff peaks appear.
  8. Lay out your vanilla cake shells and divide the whipped cream evenly among the shells.
  9. Top with the cooled fruit.
  10. ENJOY right away or refrigerate to ENJOY later.
