Prep time: 15-20 minutes
Cook time: 5-8 minutes
Materials:
- 2 cups chopped strawberries
- 1/3 cup granulated sugar
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1/3 cup softened mascarpone cheese
- 12 store bought vanilla cake shells
Process:
- In a small sauce pan add in the chopped strawberries and granulated sugar.
- Cook over medium heat for 5-8 minutes, stirring often, until the strawberries have softened and released some of the juices.
- Remove from heat and set aside to cool completely.
- In a medium sized mixing bowl add in the heave whipping cream.
- Using a hand held mixer start to mix until frothy and then add in the powdered sugar.
- Mix until the cream becomes velvety and thickened.
- Add in the softened mascarpone cheese and continue to mix until stiff peaks appear.
- Lay out your vanilla cake shells and divide the whipped cream evenly among the shells.
- Top with the cooled fruit.
- ENJOY right away or refrigerate to ENJOY later.
