Materials:
- 2 lbs. cod patted dry, sprinkled with salt and pepper
- 2 large eggs w/ 1 tsp dried parsley, 1 tbsp. grated Parmesan cheese, salt and pepper to taste
- 1/4 cup bread crumbs w/ 1 cup all-purpose flour, 1 tsp dried parsley, 1 tbsp. grated Parmesan cheese, salt and pepper to taste
- 3/4-1 cup neutral oil
Process:
- In one dish combine the eggs, parsley, parmesan, salt and pepper. Mix well and set aside.
- In a separate dish combine the breadcrumbs, flour, parsley, parmesan, salt and pepper. Mix well.
- Sprinkle the cod with some salt and pepper.
- Taking one piece at a time dip the fish in the egg mixture and then directly into the bread mixture. Coat the whole fish and set aside as you continue to coat the remaining fish.
- In a large skillet add in the oil (enough for a shallow fry).
- Keeping the heat on medium/high let the oil heat up.
- Fry the fish in batches making sure not to overcrowd the pan. Fry for 3-4 minutes per side (times may change depending on the thickness).
- Continue to fry until all the fish is cooked, then plate and ENJOY!
