Prep time: 15-20 minutes
Cook time: 25-30 minutes
Materials:
- 1 1/3 cups flour sifted
- 1 tbsp. baking powder sifted
- Pinch of salt
- 3 apples of your choice (I used Gala) cubed
- 5 eggs at room temperature
- 1 cup sugar
- 1/2 tbsp. cinnamon
- 2 tbsp. vegetable oil
- 1/3 cup hot water
- Powdered sugar for dusting
Process:
- Preheat the oven to 375 degrees F and grease a 9″ springform pan with some unsalted butter or cooking spray. Set aside.
- Peel, cube and place your apples in a small mixing bowl.
- Coat your apples in 1/2 tbsp. cinnamon and set aside.
- In a medium sized mixing bowl combine the flour, baking powder and salt. Mix and set aside.
- In a separate mixing bowl add in the eggs and 1 cup sugar. Mix using a hand held mixer until the mixture is pale yellow and fluffy (5-8 minutes).
- Add in the dry ingredients and mix only to combine. Don’t over mix so you don’t deflate the eggs.
- Add in the vegetable oil and hot water. Mix to incorporate.
- Fold in the apples.
- Pour the batter into your prepared pan.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let cool completely.
- Dust with some powdered sugar, plate and ENJOY!
