Apple Cake

Prep time: 15-20 minutes

Cook time: 25-30 minutes

Materials:

  • 1 1/3 cups flour sifted
  • 1 tbsp. baking powder sifted
  • Pinch of salt
  • 3 apples of your choice (I used Gala) cubed
  • 5 eggs at room temperature
  • 1 cup sugar
  • 1/2 tbsp. cinnamon
  • 2 tbsp. vegetable oil
  • 1/3 cup hot water
  • Powdered sugar for dusting

Process:

  1. Preheat the oven to 375 degrees F and grease a 9″ springform pan with some unsalted butter or cooking spray. Set aside.
  2. Peel, cube and place your apples in a small mixing bowl.
  3. Coat your apples in 1/2 tbsp. cinnamon and set aside.
  4. In a medium sized mixing bowl combine the flour, baking powder and salt. Mix and set aside.
  5. In a separate mixing bowl add in the eggs and 1 cup sugar. Mix using a hand held mixer until the mixture is pale yellow and fluffy (5-8 minutes).
  6. Add in the dry ingredients and mix only to combine. Don’t over mix so you don’t deflate the eggs.
  7. Add in the vegetable oil and hot water. Mix to incorporate.
  8. Fold in the apples.
  9. Pour the batter into your prepared pan.
  10. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  11. Let cool completely.
  12. Dust with some powdered sugar, plate and ENJOY!
