Blueberry/ Banana Muffins

Prep time: 15-20 minutes

Cook time: 20-25 minutes

Materials:

  • 3 ripe bananas mashed
  • 1 cup blueberries
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • Pinch of salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1/4 cup buttermilk
  • 1 tbsp. vanilla extract
  • Zest of 1 lemon
  • Powdered sugar for dusting (optional)

Process:

  1. Preheat your oven to 350 degrees F and line a muffin tin with some liners. Set aside.
  2. In a small mixing bowl add in your bananas and using the back of your fork, mash until smooth.
  3. In a separate bowl combine the flour, baking soda and salt. Mix well and add 1 tbsp. of the flour to your blueberries making sure the flour coats them all.
  4. Set aside.
  5. In yet another bowl combine the butter with the sugar. Mix until combined and slightly fluffy.
  6. Add in the eggs one at a time making sure to mix well after each egg.
  7. Add in the buttermilk, vanilla, lemon zest and mashed banana. Mix well to combine.
  8. Add the dry ingredients in and mix only long enough to incorporate. Be careful not to overmix.
  9. Fold in the blueberries.
  10. Evenly divide among the 12 liners.
  11. Bake 20-25 minutes or until a toothpick inserted into the center comes out clean.
  12. Let cool completely.
  13. Dust with powdered sugar and ENJOY!
