Materials:
- 3 ripe bananas mashed
- 1 cup blueberries
- 1 1/2 cups flour
- 1 tsp baking soda
- Pinch of salt
- 1/2 cup sugar
- 1/2 cup unsalted butter
- 2 large eggs
- 1/4 cup buttermilk
- 1 tbsp. vanilla extract
- Zest of 1 lemon
- Powdered sugar for dusting (optional)
Process:
- Preheat your oven to 350 degrees F and line a muffin tin with some liners. Set aside.
- In a small mixing bowl add in your bananas and using the back of your fork, mash until smooth.
- In a separate bowl combine the flour, baking soda and salt. Mix well and add 1 tbsp. of the flour to your blueberries making sure the flour coats them all.
- Set aside.
- In yet another bowl combine the butter with the sugar. Mix until combined and slightly fluffy.
- Add in the eggs one at a time making sure to mix well after each egg.
- Add in the buttermilk, vanilla, lemon zest and mashed banana. Mix well to combine.
- Add the dry ingredients in and mix only long enough to incorporate. Be careful not to overmix.
- Fold in the blueberries.
- Evenly divide among the 12 liners.
- Bake 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let cool completely.
- Dust with powdered sugar and ENJOY!
