Cook time: 18-20 minutes
Materials:
- 1 1/4 cups flour
- 3/4 cup yellow cornmeal
- 1 tbsp. baking powder
- Pinch of salt
- 1/4 cup sugar
- 2 tbsp. honey
- 1/2 cup (1 stick) unsalted butter at room temperature
- 2 eggs
- 1/2 cup whole milk
- 1/4 cup buttermilk
Process:
- Preheat the oven to 350 degrees Fand line a muffin tin with some liners. Set aside.
- In a medium sized mixing bowl combine the flour, cornmeal, baking powder and salt. Mix well and set aside.
- In another medium sized mixing bowl add in the butter and sugar. Mix well until the sugar is incorporated.
- Add in the eggs one at a time, mixing well after each egg.
- Add in the whole milk, buttermilk and honey. Mix well.
- Add the dry ingredients to the wet and mix just long enough to incorporate.
- Divide e-venly amongst the muffin liners.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool completely and ENJOY!
