Corn Muffins

Prep time: 15 minutes

Cook time: 18-20 minutes

Materials:

  • 1 1/4 cups flour
  • 3/4 cup yellow cornmeal
  • 1 tbsp. baking powder
  • Pinch of salt
  • 1/4 cup sugar
  • 2 tbsp. honey
  • 1/2 cup (1 stick) unsalted butter at room temperature
  • 2 eggs
  • 1/2 cup whole milk
  • 1/4 cup buttermilk

Process:

  1. Preheat the oven to 350 degrees Fand line a muffin tin with some liners. Set aside.
  2. In a medium sized mixing bowl combine the flour, cornmeal, baking powder and salt. Mix well and set aside.
  3. In another medium sized mixing bowl add in the butter and sugar. Mix well until the sugar is incorporated.
  4. Add in the eggs one at a time, mixing well after each egg.
  5. Add in the whole milk, buttermilk and honey. Mix well.
  6. Add the dry ingredients to the wet and mix just long enough to incorporate.
  7. Divide e-venly amongst the muffin liners.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool completely and ENJOY!
