Materials:
- 1 lb. spaghetti cooked according to package directions
- 1 lb. ground turkey
- 1 onion chopped
- 1 carrot chopped
- 3 garlic cloves minced
- 1/4 tsp chopped thyme
- 1/4 tsp chopped rosemary
- 1/4 cup red wine (if you don’t want to use wine substitute for vegetable or chicken stock)
- 28 ounce tomato sauce
- 1/2 cup grated Parmesan cheese
- 1 tbsp. oregano
- 1 tsp sugar
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
- 2 tbsp. olive oil
Process:
- In a soup pot or Dutch oven over medium/high heat, add in 2 tbsp. olive oil.
- Add in the onion and cook 2-3 minutes until softened.
- Add in garlic and cook until fragrant.
- Add in the carrot. Cook 2-3 minutes and then add in the ground turkey.
- Cook, breaking the meat up with a wooden spoon, until turkey is cooked through (3-5 minutes).
- Add in the red wine and let simmer for 3-4 minutes.
- Add in the tomato sauce and season with chopped rosemary and thyme, dried oregano, sugar, red pepper flakes, salt and pepper. Stir well to incorporate.
- Cover and simmer for 30-45 minutes.
- Add in the cooked pasta and mix well to combine.
- Add in the Parmesan cheese.
- Plate and ENJOY!
