Creamy Pasta With Peas

Prep time: 15 minutes

Cook time: 25-30 minutes

Materials:

  • 1 lb. pasta cooked
  • 1 large onion chopped
  • 1 cup frozen peas
  • 3 garlic cloves minced
  • 1 lb. ground beef
  • 4 cups crushed tomatoes
  • 1/2 cup mascarpone cheese
  • 1/2 cup sharp mozzarella cheese
  • 1 tsp oregano
  • 1 tsp marjoram
  • 1/2 tsp paprika
  • 1/2 tsp basil
  • Salt and pepper to taste
  • 2 tbsp. olive oil

Process:

  1. In a skillet with high sides add in the olive oil.
  2. Keeping the heat on medium/ high add in the onion and cooked until golden, about 2-3 minutes.
  3. Add the garlic in and cook for an additional 60-90 seconds.
  4. Add in the ground beef and cook breaking the meat up with a wooden spoon. Cook breaking the meat up for 3-5 minutes or until the ground beef is fully cooked through.
  5. Season with salt and pepper.
  6. Pour in the crushed tomatoes. Stir in to combine with the ground beef.
  7. Season with oregano, marjoram, paprika, basil, salt and pepper (if needed).
  8. Add in the peas. Lower the heat to a simmer, cover and cook for 15 minutes.
  9. While your sauce is cooking, cook the pasta according to package instructions, drain and set aside. Make sure to reserve about 1 cup of pasta water incase your sauce is too thick.
  10. Add in the cooked pasta and stir.
  11. Remove from heat and add in the mascarpone and cheddar cheese. Mix weill.
  12. Serve and ENJOY!
