Prep time: 15-20 minutes
Cook time: 35-45 minutes
Materials:
- Tater tots (amount will vary depending on dish size)
- 8 eggs
- 1/2 onion finely chopped
- 1/2 bell pepper chopped
- Salt and pepper to taste
- 1 paprika
- 1 tsp garlic powder
- 1/2 tsp oregano
- 1/4 cup cheddar cheese
Process:
- Preheat the oven to 385 degrees F and grease a round baking dish (about 9 inch) with some cooking spray/ oil or butter.
- Coat the bottom of the dish with a layer of tater tots.
- Season with salt, pepper, paprika, garlic powder and oregano. Set aside.
- In a mixing bowl combine the eggs, salt, pepper, onion and bell pepper.
- Add in the cheddar cheese and mix to combine.
- Pour the mixture over your tater tots.
- Bake for 35-45 minutes.
- Let sit for 5 minutes before cutting into it, then plate and ENJOY!
