Breakfast Egg and Tater Tot Bake

Prep time: 15-20 minutes

Cook time: 35-45 minutes

Materials:

  • Tater tots (amount will vary depending on dish size)
  • 8 eggs
  • 1/2 onion finely chopped
  • 1/2 bell pepper chopped
  • Salt and pepper to taste
  • 1 paprika
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • 1/4 cup cheddar cheese

Process:

  1. Preheat the oven to 385 degrees F and grease a round baking dish (about 9 inch) with some cooking spray/ oil or butter.
  2. Coat the bottom of the dish with a layer of tater tots.
  3. Season with salt, pepper, paprika, garlic powder and oregano. Set aside.
  4. In a mixing bowl combine the eggs, salt, pepper, onion and bell pepper.
  5. Add in the cheddar cheese and mix to combine.
  6. Pour the mixture over your tater tots.
  7. Bake for 35-45 minutes.
  8. Let sit for 5 minutes before cutting into it, then plate and ENJOY!
