No Bake Peanut Butter/ Oatmeal Energy Bites

Materials:

  • 1 cup old fashioned oats
  • 1 cup smooth peanut butter (or soy nut butter)
  • 1/2 cup pretzels
  • 1/3 cup honey
  • 1/2 cup semisweet mini chocolate chips

Process:

  1. In a blender or food processor add your old fashioned oats and pulse until you get the consistency you like.
  2. Pour the oats into a mixing bowl.
  3. Into the same food processor add in the pretzel and pulse to break them up.
  4. Pout the pretzels into the same bowl as the oats.
  5. Add in peanut butter (or soy nut butter), along with honey and chocolate chips.
  6. Mix well using a spatula.
  7. Place the mixture (covered) into the fridge for 1 hour.
  8. In one hour scoop out desired amounts of dough and form into a ball.
  9. Place into fridge safe container (with lid) and continue this process until done.
  10. Enjoy right away or refrigerate for up to 5 days.
