Apple Cake w/ Cinnamon Icing (Polish Sharlotka)

Apple Materials:

  • 6-7 large apples (I used McIntosh) peeled, cored and chopped
  • 3 tbsp. sugar
  • 2 tbsp. potato starch (if you don’t have any use corn starch)
  • 1 tbsp. ground cinnamon

Cake Materials:

  • 3 1/3 cups flour(additional needed for dusting)
  • 2 sticks (1 cup) unsalted butter at room temperature
  • 4 eggs yolks
  • 1 cup powdered sugar
  • 1 tbsp. sour cream
  • 2 tsp baking powder

Whipped Layer Materials:

  • 4 egg whites
  • 2/4 cup granulated sugar
  • 4 tbsp. potato starch or corn starch

Cinnamon Icing Materials:

  • 5 tbsp. powdered sugar
  • 1 tbsp. ground cinnamon
  • 2 tbsp. hot water

Process:

  1. Add apples into a skillet with high sides and cook apples on low heat. Add in sugar and stir well.
  2. Add in 2 tbsp. of potato starch and stir well to incorporate into the apples. Cook 15-20 minutes or until the apples have softened and have created a chunky apple sauce.
  3. Remove from heat and set aside to cool slightly. As it cools it will thicken even more.
  4. Preheat the oven to 375 degrees F.
  5. Prep a rectangular cake pan (about 13 x 9) with some non stick oil or butter, set aside.
  6. Either in a standing mixer with a dough hook attachment or on a clean work surface, add in the flour, baking powder and butter. Either turn the mixer or using a knife start to chop the butter up into the flour. Add in the egg yolks , sour cream and powdered sugar. Knead the dough until everything comes together and becomes smooth.
  7. Separate the dough into two equal parts. Set one aside and roll one out and place it at the bottom of your prepared baking pan.
  8. Pour the apple mixture over the top of the of the dough. Set aside.
  9. In a clean mixing bowl add in the egg whites. Using a hand held mixer whip the whites until they develop stiff peaks.
  10. Add in the granulated sugar and continue to whip until the mixture is glossy and airy.
  11. Add in the potato starch and using a spatula mix together gently, making sure not to break up the egg whites.
  12. Pour that mixture over the apples.
  13. Roll out the other half of the dough and taking a fork poke some holes in the dough and then place it over the egg whites. Try to do your best to roll it out to as close to the size of the pan as possible because once the dough is on the egg whites you won’t be able to maneuver it.
  14. Bake for 50 minutes and let cool completely before removing from the pan.
  15. Once the cake is cooled mix together the powdered sugar, cinnamon and water. Mix well and pour over the top. Let set for a few minutes and ENJOY!
