Materials:
- 2 large chicken breasts, cubed
- 2 tbsp. Dijon mustard
- 2 tbsp. honey
- 5 tbsp. olive oil (divided into 3 tbsp. & 2 tbsp.)
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
- 1 bell pepper roughly chopped
- 1 onion roughly sliced
- 6-8 mushrooms thickly sliced
Process:
- In a mixing bowl or measuring cup combine the Dijon mustard, honey, 3tbsp. olive oil, red pepper flakes, salt and pepper. Mix well.
- Place the cubed chicken in a mixing bowl and pour the honey/mustard mixture over the chicken.
- If able to refrigerate for a few hours.
- In a separate mixing bowl add in the peppers, onion, and mushrooms.
- Drizzle with olive oil and season with salt and pepper to taste.
- Taking one skewer at a time start to add the chicken and veggies.
- Continue to do this until everything is gone.
- Grill over medium/high heat until the chicken is fully cooked through.
