Honey Mustard Chicken Skewers

Materials:

  • 2 large chicken breasts, cubed
  • 2 tbsp. Dijon mustard
  • 2 tbsp. honey
  • 5 tbsp. olive oil (divided into 3 tbsp. & 2 tbsp.)
  • 1/4 tsp red pepper flakes
  • Salt and pepper to taste
  • 1 bell pepper roughly chopped
  • 1 onion roughly sliced
  • 6-8 mushrooms thickly sliced

Process:

  1. In a mixing bowl or measuring cup combine the Dijon mustard, honey, 3tbsp. olive oil, red pepper flakes, salt and pepper. Mix well.
  2. Place the cubed chicken in a mixing bowl and pour the honey/mustard mixture over the chicken.
  3. If able to refrigerate for a few hours.
  4. In a separate mixing bowl add in the peppers, onion, and mushrooms.
  5. Drizzle with olive oil and season with salt and pepper to taste.
  6. Taking one skewer at a time start to add the chicken and veggies.
  7. Continue to do this until everything is gone.
  8. Grill over medium/high heat until the chicken is fully cooked through.
