Prep time: 10 minutes
Cook time: 9-11 minutes
Materials:
- 2 1/4 cup of flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 cup and 6 tbs. butter at room temperature
- 2 tbs. vegetable shortening at room temperature
- 1 tsp. of vanilla paste (if you do not have vanilla paste just use vanilla extract)
- 3/4 cup of packed brown sugar
- 1/2 cup of granulated sugar
- 2 large eggs
- 1 1/2 cups of M&m’s
Process:
- Pre-heat your over to 375 degrees
- In a small bowl combine the flour, baking soda and salt
- In a larger mixing bowl combine the butter, vegetable shortening, both types of sugar, and vanilla paste or vanilla extract (I suggest using a hand held whisk and spatula to help the process along. I think the key to a yummy cookie is to not over mix the batter which is why I do it all by hand.)
- Add in one egg at a time and incorporate well after each egg
- Add in the dry ingredients gradually
- Once everything is well incorporated add in the M&M’s
- Using a small ice cream scoop or a tablespoon drop dollops of cookie dough onto your cookie sheet (you can line the cookie sheet with parchment paper for easier clean up)
- Bake 9-11 minutes or until the edges are nice and golden brown and then remove from the oven
- Set aside to cool for a few minutes and then Enjoy!!!
