2 large sweet potatoes cubed (I’d say about 3/4 inch or so)
1/2 onion chopped
2 tbs. olive oil
1 tbs. chili powder
1 tsp. salt
1 tsp. pepper
1/4 tsp. cinnamon
In a medium mixing bowl add the cubed potatoes, olive oil, chili powder, salt and pepper mixing everything together.
In a skillet with high sides over medium low heat pour in your potato and spice mixture (since your potatoes are coated with oil you shouldn’t need to add any additional to the pan, however if you feel like your potatoes are starting to stick to the pan feel free to add as much as needed.) Cook for 15-20 minutes or until potatoes are fully cooked through making sure to stir frequently.
Add in onions and cinnamon and cook for another 4-5 minutes or until the onions are fully cooked through making sure to once again stir frequently.
