Tacos with Corn Salsa

Corn salsa materials:

  • 2 cups frozen corn thawed
  • 1 cup chopped cilantro
  • 1 jalapeno diced
  • 1 scallion chopped
  • Juice of 1 lime
  • Pinch of salt and pepper

Avocado spread materials:

  • 1 avocado pitted and scooped out
  • juice of 1 lime
  • 1 tbs. adobo
  • pinch of salt and pepper

Taco materials:

  • 4-6 flour tortillas
  • 1 cup of roughly chopped lettuce
  • 1 cup of shredded mozzarella
  • Addition lime if desired

Process:

  1. In a small bowl combine the corn, cilantro, jalapeno, scallion, lime juice, salt, and pepper. Mix well and set aside.
  2. In another small mixing bowl add in your avocado and mash it to your desired consistency with the back of your fork. Add in the adobo, salt, pepper, and lime juice. Stir well and set aside.
  3. To assemble your taco put a tbs. or so of avocado spread, followed by salsa, then lettuce, and mozzarella. ENJOY!

Side note: Feel free to add in any other garnishes that you’d like. This is just to give you an idea of what I like. Please feel free to do and add what you like, and let me know how it turned out.
