Materials:

  • 2 large tomatoes diced
  • 1 cup cooked corn at room temp.
  • 1 jalapeno pepper diced
  • 1 red bell pepper diced
  • 1/2 cup red onion diced
  • 1 cup of cilantro diced
  • 3 pieces scallions diced
  • Juice of 1 lime
  • Pinch of salt
  • 1/2 tsp. pepper

Process:

  1. In a medium sized mixing bowl combine all the ingredients and mix well.
  2. Refrigerate for at least one hour.
  3. ENJOY!!!!
