Prep time: 30 minutes
Cook time: 18-20 minutes
Cupcake Materials:
- 1 1/2 cup all-purpose flour
- 8 tbs. unsalted butter (at room temperature)
- 2 eggs
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup granulated sugar
- 2 tbs. vegetable oil
- 2 tbs. vanilla extract
- 1 tbs. plain yogurt
- 1/2 whole milk
- 1/4 cup assorted sprinkles
Cupcake Process:
- Preheat your oven to 350 degrees and line a cupcake tin with some cupcake liners.
- In a small mixing bowl add in your flour, salt, and baking powder. Mix well and set aside.
- In a medium sized mixing bowl add in the butter and the sugar. Using a hand held electric mixer, beat the mixture until it becomes fluffy and light (about 2 minutes or so).
- Add in the eggs and continue to mix until everything is nicely combined. Make sure to scrape down the sides of the bowl when mixing to make sure everything gets nicely incorporated.
- Add the oil, yogurt, and vanilla extract and mix for another minute or so, just until everything is nicely combined.
- Add in half the dry mixture along with the milk. Mix well and then add the other half of the dry ingredients. Again mix well.
- Using a spatula fold in the sprinkles into the batter.
- Using either 2 spoons or an ice cream scoop fill up your cupcake liners about three quarters of the way. Bake 18-20 minutes or until a toothpick inserted in the middle comes out clean. Let cool completely before frosting.
Frosting Materials:
- 8 ounces cream cheese (at room temperature)
- 8 tbs. unsalted butter (at room temperature)
- 2 cups powdered sugar
- 2 tbs. vanilla extract
- 1/4 cup assorted sprinkles
- If you find that your frosting is too thick use whole milk as needed to thin it out.
Frosting process:
- In a medium sized mixing bowl, using a hand held mixer, combine the cream cheese and butter until mixture is nicely combined.
- Add in the powdered sugar in stages while mixing until everything is nicely incorporated.
- Add in the vanilla extract. Mix well (at this point if you need milk to thin out your frosting add it in 1 tbs. at a time).
- Using a piping bag, frost the top off your cooled cupcakes. Finish off with some sprinkles and ENJOY!
