Materials:
- 3 eggs
- 1/4 cup chopped mushrooms
- 1/2 cup diced onions
- 2 stalks celery diced
- 1 cup spinach
- 1/2 cup shredded mozzarella
- salt
- pepper
- scallions for topping
- 2 tbs. olive oil
Process:
- In a small mixing bowl add in your eggs, salt, and pepper. Mix well until eggs yolks have mixed with egg whites and set aside.
- In a skillet add in your olive oil and on medium low heat add in your onions, mushrooms, and celery. Cook 4-5 minutes or until fully cooked through. Add in spinach and cook for an additional minute. Using a slotted spoon remove the veggies and set aside.
- Using the same pan add in your 3 eggs and let them cook on the entire pan on low heat. Once you notice that about 90 percent of the omelet is cooked add in the veggies and cheese on once side (look at video for better instructions).
- Fold the omelet over cooking another minute or so on each side or until fully cooked through.
- Remove from pan and ENJOY!
