Chocolate Cupcakes with Oreo Cream Cheese Frosting

Cupcake Materials:

  • 3/4 cup all-purpose flour
  • 1/4 cup unsalted butter, at room temperature
  • 1/2 cup sugar
  • 1 egg
  • 1/3 cup sour cream
  • 1/4 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp. vanilla extract
  • 1/2 tsp. expresso powder
  • 1/3 tsp. baking soda
  • Pinch of salt
  • 1 cup semi-sweet chocolate chips

Cupcake Process:

  1. Preheat your oven to 350 degrees and line a cupcake pan with some liners.
  2. In a small sauce pan add in the milk and warm up on the stove taking it off the heat right before the milk comes to a boil.
  3. In a small mixing bowl add in the semi-sweet chocolate chips and pour the milk over the chips. Set the bowl aside and let the chips melt in the milk.
  4. In a medium sized mixing bowl add in the butter and sugar. Using a hand held electric mixer beat the mixture until nicely combined and fluffy. Add in the egg, sour cream, and vanilla and continue to mix until combined.
  5. Add in the salt, baking powder, and cocoa powder and continue to mix until well combined. Add in the flour and mix just until the flour is incorporated making sure not to over mix the mixture.
  6. Using a spatula give the milk and chocolate mixture a stir until it’s combined and smooth. Add that mixture to the battler and using your spatula fold in the chocolate until its combined with the batter.
  7. Fill up the cupcake liners 3/4 of the way with the batter and bake from 15-18 minutes or until fully cooked through.  Remove from oven and let cool completely before frosting.

Frosting Materials:

  • 8 oz cream cheese, at room temperature
  • 1/4 cup unsalted butter, at room temperature
  • 4 cups powdered sugar
  • 1 tsp. vanilla extract
  • 1/2 cup chocolate cookie crumbs
  • 8-10 whole oreo cookies to top cupcakes

Frosting Process:

  1. In a medium sized mixing bowl add in the cream cheese and butter . Using a hand held electric mixer beat the mixture until smooth and combined.
  2. Add in vanilla extract and mix until combined.
  3. Add in powdered sugar 1 cup at a time and mix until sugar is nicely incorporated.
  4. Using a spatula fold in the cookie crumbs. Using a piping bag or two spoons pipe the frosting over the cupcake. Top with oreo cookie and ENJOY!
