Prep time: 15 minutes
Cook time: 45-60 minutes
Potato Materials:
- 2 lbs. of baby potatoes
- 2 tbs. olive oil
- Generous pinch of salt
- Pepper to taste
- 1 tbs. dried parsley
- 1/2 tbs. Italian seasoning
Potato Process:
- Pre-heat your oven to 425 degrees.
- In a large mixing bowl add in all the above ingredients and mix well. Set aside.
Chicken Materials:
- 4 chicken thighs, bone in and skin on
- 3 tbs. of unsalted butter cut into 8 slices
- 1/2 lemon
- Pinch of salt
- Pepper to taste
- 2 springs of rosemary cut in half
- 1/2 tbs. Italian seasoning
- 1/2 tbs. dried parsley
- Olive oil
Chicken Process:
- Salt and pepper both sides of your chicken.
- Place the chicken in a baking dish. Under the chicken skin stick 2 pieces of butter and a piece of rosemary.
- Sprinkle the top with some olive oil to assure the skin gets gorgeous and crispy. Sprinkle with some dried parsley and Italian seasoning.
- Finally sprinkle a few drops of lemon juice over the top. Add in the potatoes around the chicken. Bake for 45-60 minutes or until chicken and potatoes are fully cooked through.
