Chicken And Potato Bake

Prep time: 15 minutes

Cook time: 45-60 minutes

Potato Materials:

  • 2 lbs. of baby potatoes
  • 2 tbs. olive oil
  • Generous pinch of salt
  • Pepper to taste
  • 1 tbs. dried parsley
  • 1/2 tbs. Italian seasoning

Potato Process:

  1. Pre-heat your oven to 425 degrees.
  2. In a large mixing bowl add in all the above ingredients and mix well. Set aside.

Chicken Materials:

  • 4 chicken thighs, bone in and skin on
  • 3 tbs. of unsalted butter cut into 8 slices
  • 1/2 lemon
  • Pinch of salt
  • Pepper to taste
  • 2 springs of rosemary cut in half
  • 1/2 tbs. Italian seasoning
  • 1/2 tbs. dried parsley
  • Olive oil

Chicken Process:

  1. Salt and pepper both sides of your chicken.
  2. Place the chicken in a baking dish. Under the chicken skin stick 2 pieces of butter and a piece of rosemary.
  3. Sprinkle the top with some olive oil to assure the skin gets gorgeous and crispy. Sprinkle with some dried parsley and Italian seasoning.
  4. Finally sprinkle a few drops of lemon juice over the top. Add in the potatoes around the chicken. Bake for 45-60 minutes or until chicken and potatoes are fully cooked through.
