Prep time: 15 minutes
Cook time: 6-8 hours
Materials:
- 4 large potatoes cubed
- 1 onion diced
- 2 1/2 cups chicken broth
- 4 tbs. unsalted butter
- 4 tbs. flour
- 1/4 cup heavy cream
- 1 tbs. salt
- 1 tsp. pepper
- 1tsp. Italian seasoning
- Bacon (optional)
- Sharp cheddar (optional)
Process:
- Into a crockpot add in the potatoes, onion, chicken broth, salt, pepper, and Italian seasoning. Cook for 6-8 hours on low or 4-6 hours on high.
- 30 minutes before soup is done melt the butter in a medium sized sauce pan over medium heat. Add in the flour and stir constantly for 1-2 minutes until the flour has completely disappeared.
- Add in the heavy cream and stir until the mixture thickens.
- Add the mixture to the crockpot cook for the remaining 30 minutes.
- Top with sharp cheddar and bacon and ENJOY!!!
