Cook time: 60-70 minutes
Materials:
- 2 cups flour
- 2 tbs. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 4 tsp. pumpkin pie spice
- 1 cup pure pumpkin puree
- 1/2 cup evaporated milk
- 3/4 cup brown sugar
- 2 eggs
- 1 tbs. vanilla extract
- 2 tbs. vegetable oil
- 2 granny smith apples diced
Process:
- Preheat your oven to 350 degrees and grease a 9 x 5 inch loaf pan.
- In a small mixing bowl add in the flour, baking powder, baking soda, salt, and pumpkin spice. Mix well and add 2 tbs. of mixture to apples. Mix well and set both aside.
- In a medium sized mixing bowl combine the brown sugar, pumpkin puree, oil, eggs, and vanilla. Mix well.
- Add in the dry ingredients and mix until everything is nicely incorporated.
- Fold in apples and pour batter into loaf pan.
- Cook for 60-70 minutes or until fully cooked through.
