Loaded Nachos

Cook time: 15 minutes

Nacho Materials:

  • 1 lb. ground beef
  • 2 tbs. olive oil
  • 1 small onion chopped
  • 2 garlic cloves diced
  • 1 cup tomato sauce
  • 1/4 cup water
  • 2 cups shredded cheese (I used mozzarella and sharp cheddar)
  • 1 tbs. chili powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. dried oregano
  • 1/2 tsp. paprika
  • 1 tsp. ground cumin
  • 1 tsp. salt
  • 1 tsp. black pepper
  • Tortilla chips

Pico De Gallo Materials:

  • 1 tomato chopped
  • 1/4 cup red onion diced
  • 1/3 cup fresh cilantro diced
  • 1/2 jalapeno diced
  • Juice of 1/2 lime
  • Salt and pepper to taste

Guacamole Materials:

  • 1 avocado pitted and mashed
  • 1 /4 cup fresh cilantro diced
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Process:

  1. Combine all the ingredients for the pico de gallo and mix well. Set aside.
  2. Combine all the ingredients for the guacamole and mix well. Set aside.
  3. In a medium sized skillet add in the olive oil. Keeping the heat on medium high add in the ground beef and cook until fully cooked through breaking the meat up as you go, about 4-5 minutes. If your ground beef renders a lot of fat dispose of the fat.
  4. Add in the onion and garlic and cook until the onion is cooked through, about 3-5 minutes.
  5. Add in the dry spices and mix well to combine into the ground beef.
  6. Add in the tomato sauce and water. Mix well and let cook 3-5 minutes so that the flavors can incorporate well into each other.
  7. Preheat your broiler to high.
  8. In a casserole dish place down a layer of tortilla chips. Top with half the beef mixture and half the cheese. Do the same thing with one more layer.
  9. Place the nachos under the broiler for 1-2 minutes until the cheese has melted.
  10. Once out of the over top with salsa and guacamole and ENJOY!
