4th Of July No Bake Cake

Prep time: 20 minutes

Rest time: 3-4 hours

Materials:

  • 6 cups plain Greek yogurt (separated into 2 cups each)
  • 2 cups hot water (separated into 1 cup each)
  • 6 oz red Jell-O
  • 6 oz blue Jell-O
  • 2 packets of gelatin
  • 1 cup powdered sugar (divided into 1/4 cup, 1/4 cup, 1/2 cup)
  • 3 tbsp. granulated sugar (optional)
  • 1 cup heavy whipping cream (optional)
  • Blue and red food coloring (optional)
  • 1 package chocolate tea cookies

Process:

  1. In a small mixing bowl add in 1 cup of hot water and blue Jell-O. Mix well to combine and set aside to cool. Stir occasionally and make sure the Jell-O isn’t setting too much. You want to be cooled but still pourable.
  2. Line the bottom of a springform pan ( 14″ x 9.3″ x 3″) with some parchment paper.
  3. Place a single layer of tea cookies at the bottom of the pan and set aside.
  4. In a medium sized mixing bowl add in the cooled blue Jell-O-O and 1/4 cup of confectioner’s sugar. Using a hand held electric mixer whisk just long enough for the sugar to incorporate with the Jell-O.
  5. Gradually start to add in 2 cups of Greek yogurt. Mix until the mixture is smooth.
  6. Pour the blue mixture over the tea cookies and smooth it out. Place in the fridge to set completely.
  7. In a small mixing bowl add in 1 cup of hot water and red Jell-O. Mix well to combine and set aside to cool. Stir occasionally and make sure the Jell-O isn’t setting too much. You want to be cooled but still pourable.
  8. In a medium sized mixing bowl add in the cooled red Jell-O and 1/4 cup of confectioner’s sugar. Using a hand held electric mixer whisk just long enough for the sugar to incorporate with the Jell-O.
  9. Gradually start to add in 2 cups of Greek yogurt. Mix until the mixture is smooth.
  10. Pour the red mixture over the set blue and smooth it out. Place in the fridge to set completely.
  11. Take the packets of gelatin and dissolve them in cool water according to package instructions.
  12. In a medium sized mixing bowl add 1/2 cup confectioners, 2 cups of yogurt and dissolved gelatin. Mix well to combine.
  13. Pour the mixture over the red layer. Place in the fridge to set.

Optional:

14. In a medium sized mixing bowl add in the heavy whipped cream and 3 tbsp. of granulated sugar. Mix until stiff peaks appear.

15. Take 1/4 of the mixture out and add in blue food coloring. Mix and set aside.

16. Into the remaining whipped cream add in red food coloring and mix well to combine.

17. Take the blue whipped cream and in the left hand side make a rectangle to represent where the starts on the flag are. Add in a few white sprinkles to represent the stars.

18. Taking the red whipped cream either pipe or spread red stripes over the cake. Watch video for visual.

19. Refrigerate for a few hours to set, slice and ENJOY!
