Prep time: 15 minutes
Cook time: 30-40 minutes
Materials:
- 1 package spaghetti
- 1 kielbasa link cut into half moons
- 1 onion chopped
- 2 bell peppers chopped
- 2 garlic cloves diced
- 1 cup tomato sauce
- ¼ cup tomato paste
- 1/2 cup pasta water
- 1 tbsp. dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Mozzarella for topping
- Vegetable oil for skillet
Process:
- Cook the spaghetti in salted water according to package instructions. Drain and set aside, reserving 1/2 cup pasta water.
- In a skillet with higher sides add in the vegetable oil.
- Keeping the heat on medium high add in the onions and cook for a few minutes until the onions are cooked through.
- Add in the peppers and cook for about 60-90 seconds.
- Add the garlic and continue to cook until the garlic is fragrant.
- Add in the kielbasa. Cook for an additional 3-4 minutes.
- Pour in the tomato sauce and paste along with the pasta water. Stir well to incorporate everything.
- Season with basil, oregano, salt and pepper. Mix well and cook for a few minutes.
- Preheat the oven to 380 degrees F.
- In a medium sized casserole dish add in the drained pasta.
- Pour in the kielbasa and sauce mixture. Mix until the pasta is incorporated with the sauce.
- Top with your desired amount of mozzarella cheese and bake 18-20 minutes.
- Plate and ENJOY!
