Materials:
- 1 ¾ ounce fresh yeast
- 4 cups flour sifted
- 1 ¼ cup warm milk
- ⅓ cup oil
- ¼ cup sugar
- 2 eggs (1 for dough & 1 for egg wash)
- Jam or preserves of your choice
Process:
- In a large measuring cup or small bowl add in the warm milk. Crumble in the fresh yeast and add in 1 tbsp. of flour and 1 tbsp. of sugar (take this from the flour and sugar you already measured out).
- Mix until the yeast has dissolved and then cover with a clean kitchen towel. Place in a warm place to activate the yeast (this can take anywhere from 10-20 minutes depending on how warm the location is).
- In a standing mixer fitted with a dough hook attachment add in the remaining flour, the remaining sugar, activated yeast mixture and egg.
- Start the mixer on low and let the materials start to come together.
- Once somewhat incorporated and with the mixer still running on low, gradually start to add the vegetable oil in.
- Mix for several minutes until the mixture is blended together. The dough will be tacky so don’t panic.
- Place the dough into a large bowl greased with some vegetable oil. Cover with a clean kitchen towel and set aside in a warm place to rise until doubled in size.
- Preheat the oven to 375 degrees F and line a large baking sheet with some parchment paper.
- Flour a clean work surface. Place the dough on the floured surface and knead slightly (adding more flour if necessary) until the dough comes together and is no longer tacky.
- Separate the dough into three equal pieces.
- Taking one piece at a time, separate that one piece into two.
- Roll the dough out into a rectangle (about 5-6 inch by 10-12 inch).
- Spread out the desired amount of jam over the dough and roll it into a log (watch video for visual).
- Continue to do this with the second half of the dough.
- Once both have jam and are rolled into logs start to twist the logs with each other to make a make-shift braid (watch video for visual). Place on your prepared baking sheet.
- Continue to do this with the remaining dough.
- In a small bowl add in one egg and a tbsp. of water. Mix well with a fork.
- Taking a pastry brush, brush the mixture over the sweet bread rolls.
- Bake for 25-30 minutes or until fully cooked through.
- Let cool completely, cut and ENJOY!
