Italian Easter Bread

Prep time: 20 minutes

Rest time: 1 hour

Cook time: 18-20 minutes

Materials:

  • 1 1/4 cup whole milk
  • 1/3 cup unsalted butter
  • 4 cups flour sifted (additional 1/4 cup needed for dusting and kneading dough)
  • 1/3 cup sugar
  • 1 packet (2 1/4 tsp instant yeast)
  • Pinch of salt
  • 2 eggs (additional egg needed for egg wash)
  • 3 additional eggs (raw or hard boiled) to insert in the middle of dough and bake
    • if cooked make sure the eggs are cooked in advance so they have enough time to cool before inserting them into the center
  • sprinkles of your choice

Process:

  1. Add the whole milk and unsalted butter to a small sauce pan. Over low heat cook until the butter has completely melted. Make sure the mixture doesn’t get too hot (not over 110 degrees F). Once the butter has melted remove from heat and set aside.
  2. In the bowl of a standing mixer add in the yeast, sugar and salt.
  3. Add in one egg at a time and using a hand held whisk mix to incorporate into the sugar.
  4. Place the bowl into the mixer and using a dough hook start to mix on low.
  5. Add in the milk and butter mixture as well as half of the flour.
  6. Keep mixing on low to combine everything and then slowly add in the remaining flour.
  7. Mix on medium speed for 8-10 minutes until the dough comes together completely. The dough will be tacky so do not panic.
  8. Slightly flour a clean work surface and pour the dough out over the flour.
  9. Knead with your hands for a few minutes adding more flour if necessary (make sure you do not exceed 1/4 cup otherwise your dough with be too tough).
  10. Once the dough is smooth, roll the dough into a ball. Cover with a clean lint free kitchen towel and let it rest for about 10-15 minutes.
  11. After 10-15 minutes divide the dough into 6 equal pieces. Taking two pieces out a time roll each piece into a rope about 12-14 inches long.
  12. Then take the 2 ropes and crisscross them with each other. Pinch the ends of the ropes and then join them together into a circle. Watch video for visual.
  13. Place on a greased baking sheet and continue to do this to the remaining dough.
  14. After all the dough is formed, cover the dough with a clean lint free kitchen towel, and place in a warm place to rise until the dough has doubled in size (about 45 minutes).
  15. Once risen preheat the oven to 350 degrees F.
  16. Taking your egg wash (1 egg w/ 1 tbsp. water) wash over the top of the dough. Sprinkle with your desired candies or sprinkles and place the cooked or raw egg into the center (again watch video for visual).
  17. Bake 18-20 minutes or until fully cooked through.
  18. Let cool completely and then ENJOY!
