Smashed Potatoes

Prep time: 10 minutes

Cook time: 40-45 minutes

Materials:

  • 1 lb. fingerling potatoes (any other potato will also work great with this recipe)
  • 2 tbsp. olive oil
  • 2 tbsp. unsalted butter
  • 1 tbsp. garlic powder
  • 1/2 tbsp. paprika
  • 1/2 tbsp. Herbes De Provence
  • Salt and pepper to taste
  • Parmesan cheese to taste
  • Fresh parsley for garnish (optional)

Process:

  1. Preheat the oven to 425 degrees F.
  2. While oven is preheating place your baking sheet in the oven to heat up.
  3. Cut each potato in half length wise.
  4. Season each potato with olive oil, garlic powder, paprika, Herbes De Provence, salt and pepper.
  5. Once oven preheats remove the baking sheet from the oven. Add in the unsalted butter into the preheated pan and let it melt.
  6. Once the butter melts place the potatoes on the pan cut side down.
  7. Bake for 20-25 minutes.
  8. Remove from the oven and using the flat side of a glass smash the potatoes down (watch video for visual).
  9. Sprinkle with some Parmesan cheese and place back in the oven for 5-10minutes. If you want them more crispy feel free to leave them in longer.
  10. Remove from oven and garnish with some fresh parsley (optional) and ENJOY!
