Prep time: 10 minutes
Cook time: 40-45 minutes
Materials:
- 1 lb. fingerling potatoes (any other potato will also work great with this recipe)
- 2 tbsp. olive oil
- 2 tbsp. unsalted butter
- 1 tbsp. garlic powder
- 1/2 tbsp. paprika
- 1/2 tbsp. Herbes De Provence
- Salt and pepper to taste
- Parmesan cheese to taste
- Fresh parsley for garnish (optional)
Process:
- Preheat the oven to 425 degrees F.
- While oven is preheating place your baking sheet in the oven to heat up.
- Cut each potato in half length wise.
- Season each potato with olive oil, garlic powder, paprika, Herbes De Provence, salt and pepper.
- Once oven preheats remove the baking sheet from the oven. Add in the unsalted butter into the preheated pan and let it melt.
- Once the butter melts place the potatoes on the pan cut side down.
- Bake for 20-25 minutes.
- Remove from the oven and using the flat side of a glass smash the potatoes down (watch video for visual).
- Sprinkle with some Parmesan cheese and place back in the oven for 5-10minutes. If you want them more crispy feel free to leave them in longer.
- Remove from oven and garnish with some fresh parsley (optional) and ENJOY!
