Materials:
- 1 large onion chopped
- 3-4 garlic cloves diced
- 2 bell peppers chopped
- 2 cups white rice
- 1 lb. ground turkey
- 28 oz can tomato sauce
- 1 cup chicken stock
- 4 tbsp. olive oil (separated)
- Salt and pepper to taste
- 1 tbsp. oregano
- 1 tsp paprika
- 1 tsp parsley
- 1/2 tsp basil
Process:
- In a skillet with high sides add in 2 tbsp. of olive oil.
- Add in the ground turkey and season with salt and pepper. Cook keeping the heat on medium/ high until fully cooked through.
- Remove the cooked turkey and place on a clean plate.
- Into the same skillet add in the remaining 2 tbsp. of olive oil.
- Add in the onion and cook until golden, about 3-4 minutes, stirring often.
- Add in the garlic and cook until fragrant, about 60 seconds.
- Add in the peppers and cook for an additional 2-3 minutes.
- Add the turkey back in.
- Add in the tomato sauce and chicken stock.
- Season with oregano, paprika, basil, parsley, salt and pepper. Mix well to combine.
- Bring to a boil and add in the rice.
- Cover and cook until the rice is fully cooked through (about 20-25 minutes).
- Plate and ENJOY!
