Materials:
- 1 baguette/ bread of your choice sliced
- 1 large onion chopped
- 4 garlic cloves diced
- 1-2 cups kale chopped
- 1 can cannellini beans (drained and rinsed)
- 1 tsp marjoram
- Salt and pepper to taste
- 2 tbsp. olive oil (additional for drizzling over topped bruschetta, optional)
- Parmesan cheese to taste
Process:
- In a skillet with high sides add in the olive oil.
- Keeping the heat on medium/ high add in the onion. Cook 3-4 minutes, stirring often, until onions are golden and cooked.
- Add in the garlic and cook for about 60 seconds or until fragrant.
- Add in the beans and kale.
- Season with marjoram, salt and pepper. Mix well and remove from heat.
- Toast your bread either in the oven or on the stove top and top each piece with the kale/ bean mixture.
- Drizzle with additional oil (optional) and some fresh parmesan (optional).
- Plate and ENJOY!
