Kale & Bean Bruschetta

Prep time: 15 minutes

Cook time: 20 minutes

Materials:

  • 1 baguette/ bread of your choice sliced
  • 1 large onion chopped
  • 4 garlic cloves diced
  • 1-2 cups kale chopped
  • 1 can cannellini beans (drained and rinsed)
  • 1 tsp marjoram
  • Salt and pepper to taste
  • 2 tbsp. olive oil (additional for drizzling over topped bruschetta, optional)
  • Parmesan cheese to taste

Process:

  1. In a skillet with high sides add in the olive oil.
  2. Keeping the heat on medium/ high add in the onion. Cook 3-4 minutes, stirring often, until onions are golden and cooked.
  3. Add in the garlic and cook for about 60 seconds or until fragrant.
  4. Add in the beans and kale.
  5. Season with marjoram, salt and pepper. Mix well and remove from heat.
  6. Toast your bread either in the oven or on the stove top and top each piece with the kale/ bean mixture.
  7. Drizzle with additional oil (optional) and some fresh parmesan (optional).
  8. Plate and ENJOY!
