Roll Materials:
- 5 cups flour (additional 6 tbsp.) sifted
- 1 cup warm milk
- 1.6 ounces fresh yeast at room temp
- 1/2 cup sugar plus 2 tbsp.
- Pinch of salt
- 6 tbsp. unsalted butter melted and cooled
- 1 egg at room temp
- 2 egg yolks (leave whites to brush tops with) at room temp
- 1 tsp vanilla extract
Filling Materials:
- 1 cup pumpkin puree
- 4 tbsp. sugar
- 1 tsp cinnamon
Filing Process:
- Combine the above materials and set aside until ready to use.
Roll Process:
- In a small mixing bowl add in the fresh yeast and 2 tbsp. of sugar. Using a spoon mix until the mixture turns to liquid.
- Into the bowl add in 2 tbsp. of your warm milk. Mix to combine.
- Pour the yeast mixture into the remaining milk and mix to combine.
- Into the bowl of your standing mixer add in 6 tbsp. of flour and a pinch of salt. Pour in the yeast mixture and mix to combine roughly.
- Cover and set aside for 15-20 minutes to allow the yeast to activate.
- In a medium sized mixing bowl add in the egg and egg yolks as well as the remaining sugar. Using a hand held whisk mix until combined and pale in color.
- Once the yeast mixture has activated add in the remaining flour, egg mixture, unsalted butter and vanilla.
- Using a dough hook attachment mix for 5-6 minutes until the dough is smooth and starts to gather around the hook.
- Cover and set aside for an additional 30-40 minutes or until doubled in size.
- Flour a clean work surface and place your risen dough down.
- Roll out into a log about 15-16 inches long.
- Divide into 16 equal pieces.
- Taking each piece, flatten slightly, add in 1-2 tbsp. of the pumpkin mixture and pinch closed to ensure filling won’t leak out. Roll into a ball and place on a parchment lined baking sheet.
- Once all 16 have been completed cover and set aside while your oven preheats to 375 degrees F.
- Once preheated brush the tops with your egg whites and cook for 20-25 minutes or until fully cooked through.
- Let cool completely and ENJOY!
