Materials:
- 3 fish fillets (I used tilapia)
- 1/2 cup unsalted butter softened
- 3 large garlic cloves grated
- 1 cup panko
- 1/3 cup Parmesan cheese
- Salt and pepper to taste
- 1 tbsp. parsley
- Drizzle of olive oil
Process:
- Preheat the oven to 385 degrees F and line a baking sheet with some parchment paper or aluminum foil. Set aside.
- Salt and pepper both sides of your fish.
- In a small dish combine the butter and grated garlic.
- Using half of your butter mixture, butter the top side of your fish. Leave the remaining butter for the other side.
- In a medium sized mixing bowl combine the panko, parmesan, parsley and salt and pepper. Mix well.
- Place the fish buttered side down into the the panko mixture.
- While the fish is still buttered side down in the panko, butter the top side of the fish.
- Flip the fish to coat the remaining side.
- Place the fish on your prepared pan continue this process with the remaining fish.
- Once all are coated and on the baking sheet, drizzle with a bit of olive oil.
- Bake for 18-20 minutes and then broil for 3-5 minutes until the tops are golden brown.
- Plate along side some veggies (optional) and ENJOY!
