Cook time: 15-20 minutes
Materials:
- 1 lb. large shrimp peeled and deveined
- 1 package (1 lb.) angel hair pasta
- 1 shallot chopped
- 4 garlic cloves minced
- Juice of 1 lemon
- 1/4 cup fresh parsley
- 1/3 cup dry white wine
- 4 tbsp. unsalted butter
- 2 tbsp. olive oil
- Salt and pepper to taste
- 1/4 tsp red pepper flakes
- 1/2 cup grated Parmesan cheese
Process:
- Cook the pasta in salted water according to package instructions. Reserve 1/4 cup of cooking liquid.
- In a skillet with high sides add in the unsalted butter and olive oil. Keeping the heat on medium/ high allow the butter to melt.
- Add in the chopped shallot and cook until softened (about 3-4 minutes), stirring often.
- Add in the garlic and cook until fragrant, about 60 seconds.
- Add in the shrimp and cook 2-3 minutes and then flip the shrimp over.
- Cook the shrimp for about 60 seconds and then add in dry white wine along with the lemon juice.
- Season with salt, pepper and red pepper flakes.
- Add in the the fresh parsley, leaving about 1 tbsp. for the garnish.
- Mix well and cook 3-5 minutes.
- Lower the heat to low and add in the cooked pasta.
- Add in the grated Parmesan cheese and mix well. At this point if the sauce seems thick add in the cooked pasta water to thin the sauce out. If not, discard.
- Plate, garnish with fresh parsley and ENJOY!
