Rice Crispy Easter Bark

Prep time: 15 minutes

Cook time: 5-8 minutes

Materials:

  • 1/2 cup unsalted butter
  • 10 oz. bag mini marshmallows
  • 1/2 cup large marshmallows
  • 8 cups rice crispy cereal
  • 3 Hershey’s chocolate bars
  • 1 tsp coconut oil
  • 1/2 cups chocolate eggs crushed (Cadbury is my favorite to use)
  • Variety of peeps

Process:

  1. In a soup pot over medium heat add in the unsalted butter.
  2. Stir using a spatula or wooden spoon as the butter melts.
  3. Add in the mini and large marshmallows. Mix until a majority of the mini marshmallows have melted.
  4. At this point if you are using food coloring add it in and mix quickly (optional).
  5. Remove from heat and add in the rice crispy cereal. Mix well to coat all the cereal in the marshmallow.
  6. Pour into a prepared greased pan.
  7. Smooth out and set aside to cool.
  8. Once cooled melt the chocolate and coconut oil in the microwave at 30 second increments.
  9. Drizzle over the rice crispy treats using half of the chocolate.
  10. Dip the peeps in the remaining melted chocolate and place randomly all over the rice crispy treats.
  11. Sprinkle the chocolate eggs over the chocolate drizzle and set aside to allow everything to set.
  12. Cut, plate and ENJOY!
