Greek Inspired Chicken and Veggie Kabobs

Prep time: 15-20 minutes

Cook time: 10-15 minutes

Materials:

  • 2 large chicken breasts cut into large cubes
  • 1/2 cup olive oil
  • Juice of 1 lemon
  • 4 large garlic cloves minced or pressed
  • 1/4 tsp chopped fresh thyme
  • 1/4 cup chopped fresh parsley
  • Salt & pepper to taste
  • 1/2 onion cubed
  • 8-10 mushrooms cut into quarters
  • 1/4 each red and green pepper cubed

Process:

  1. Place the cubed chicken in bowl with a tight seal and set aside.
  2. In a separate small mixing bowl combine the olive oil, lemon juice, garlic cloves, fresh thyme, parsley, salt and pepper. Mix well.
  3. Pour the marinade over the chicken making sure the chicken is coated well.
  4. Cover and refrigerate 8-10 hours or overnight.
  5. When ready soak your skewers (if using bamboo skewers) in water for an hour or so.
  6. Start to skewer on the chicken, onion, mushroom and pepper, alternating until the skewer is full.
  7. Grill rotating often until chicken is fully cooked through. Times will vary on grill/ temperature/ and size of chicken.
  8. Plate and ENJOY!
