Cook time: 10-15 minutes
Materials:
- 2 large chicken breasts cut into large cubes
- 1/2 cup olive oil
- Juice of 1 lemon
- 4 large garlic cloves minced or pressed
- 1/4 tsp chopped fresh thyme
- 1/4 cup chopped fresh parsley
- Salt & pepper to taste
- 1/2 onion cubed
- 8-10 mushrooms cut into quarters
- 1/4 each red and green pepper cubed
Process:
- Place the cubed chicken in bowl with a tight seal and set aside.
- In a separate small mixing bowl combine the olive oil, lemon juice, garlic cloves, fresh thyme, parsley, salt and pepper. Mix well.
- Pour the marinade over the chicken making sure the chicken is coated well.
- Cover and refrigerate 8-10 hours or overnight.
- When ready soak your skewers (if using bamboo skewers) in water for an hour or so.
- Start to skewer on the chicken, onion, mushroom and pepper, alternating until the skewer is full.
- Grill rotating often until chicken is fully cooked through. Times will vary on grill/ temperature/ and size of chicken.
- Plate and ENJOY!
