Baked Plum Fritters

Prep time: 15-20 minutes

Cook time: 25-30 minutes

Materials:

  • 2 1/4 cups all-purpose flour
  • 1 cup plums (chopped)
  • 1 cup unsalted butter melted
  • 4 eggs
  • 2 tbsp. baking powder
  • 1/3 cup granulated sugar
  • Pinch of salt
  • 1 tbsp. vanilla extract
  • Powdered sugar for dusting

Process:

  1. Preheat the oven to 350 degrees F and line a large baking sheet with parchment paper.
  2. In a medium sized mixing bowl combine the flour, baking powder and salt. Mix well and set aside.
  3. In a separate mixing bowl add in the unsalted butter and granulated sugar. Mix until the sugar is combined with the butter.
  4. Add in one egg at a time, mixing well after each egg.
  5. Add in the vanilla extract and mix well.
  6. Add the dry ingredients to the wet and mix well to incorporate.
  7. Fold in the plums.
  8. Using a ice cream scoop place dallops of batter on the baking tray (about 2 inch. apart) and using the palm of your hand slightly flatten the dough.
  9. Bake for 25-30 minutes or until fully cooked through.
  10. Remove and let cool slightly before topping with powdered sugar.
