Materials:
- 2 1/4 cups all-purpose flour
- 1 cup plums (chopped)
- 1 cup unsalted butter melted
- 4 eggs
- 2 tbsp. baking powder
- 1/3 cup granulated sugar
- Pinch of salt
- 1 tbsp. vanilla extract
- Powdered sugar for dusting
Process:
- Preheat the oven to 350 degrees F and line a large baking sheet with parchment paper.
- In a medium sized mixing bowl combine the flour, baking powder and salt. Mix well and set aside.
- In a separate mixing bowl add in the unsalted butter and granulated sugar. Mix until the sugar is combined with the butter.
- Add in one egg at a time, mixing well after each egg.
- Add in the vanilla extract and mix well.
- Add the dry ingredients to the wet and mix well to incorporate.
- Fold in the plums.
- Using a ice cream scoop place dallops of batter on the baking tray (about 2 inch. apart) and using the palm of your hand slightly flatten the dough.
- Bake for 25-30 minutes or until fully cooked through.
- Remove and let cool slightly before topping with powdered sugar.
