Sheet Pan Chicken and Potatoes

Prep time: 15 minutes

Cook time: 55-60 minutes

Potato Materials:

  • 2 lbs. potatoes of your choice
  • 2 tbsp. olive oil
  • Salt and pepper to taste
  • 1 tbsp. paprika
  • 1 tbsp. parsley
  • 1 tsp oregano

Chicken Materials:

  • 6-8 chicken drumsticks
  • 2 tbsp. olive oil
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp marjoram
  • 1/2 tsp onion powder

Additional Materials:

  • 1 onion (quartered)
  • 8-10 garlic cloves (left whole, just peeled)
  • 2 tbsp. olive oil (drizzle over top)

Process:

  1. Preheat the oven to 380 degrees F and lightly grease a large sheet pan. Set aside until needed.
  2. In a mixing bowl combine all of the potato ingredients. Mix well to make sure each potato is coated fully with all the seasonings. Set aside.
  3. Place the drumsticks on the pan and drizzle with olive oil. Season with the remaining ingredients. Turn the drumsticks making sure to coat all sides.
  4. Add the onion and peeled garlic cloves to the sheet pan along with the seasoned potatoes.
  5. Drizzle with some olive oil and bake for 55 minutes to 1 hour, turning over mid way.
  6. Plate and ENJOY!
