Prep time: 15 minutes
Cook time: 35-45 minutes
Materials:
- 8 large eggs
- 3-4 slices ham chopped
- 1 scallion chopped
- 1 cup cooked quinoa
- 1 cup sharp cheddar cheese (additional needed for top)
- 1/3 cup ricotta cheese
- Salt and pepper to taste
- 1/2 tsp parsley
- Red pepper flakes to taste
- Non-stick cooking spray to grease pie plate
Process:
- Preheat the oven to 350 degrees F and grease a pie plate with some cooking spray or unsalted butter. Set aside.
- In a large mixing bowl add in the egg and break them up slightly using a whisk or a fork.
- Add in the cheddar cheese, ham, scallions, quinoa, salt, pepper, parsley and red pepper flakes. Mix well to incorporate.
- Add in the ricotta cheese and mix in slightly leaving a few small pieces still in tact.
- Pour the mixture into your prepared pie plate and bake 35-45 minutes or until the eggs are set completely.
- Let cool for a few minutes before cutting.
- Plate and ENJOY!
