Ham, Egg & Cheese Crustless Quiche

Prep time: 15 minutes

Cook time: 35-45 minutes

Materials:

  • 8 large eggs
  • 3-4 slices ham chopped
  • 1 scallion chopped
  • 1 cup cooked quinoa
  • 1 cup sharp cheddar cheese (additional needed for top)
  • 1/3 cup ricotta cheese
  • Salt and pepper to taste
  • 1/2 tsp parsley
  • Red pepper flakes to taste
  • Non-stick cooking spray to grease pie plate

Process:

  1. Preheat the oven to 350 degrees F and grease a pie plate with some cooking spray or unsalted butter. Set aside.
  2. In a large mixing bowl add in the egg and break them up slightly using a whisk or a fork.
  3. Add in the cheddar cheese, ham, scallions, quinoa, salt, pepper, parsley and red pepper flakes. Mix well to incorporate.
  4. Add in the ricotta cheese and mix in slightly leaving a few small pieces still in tact.
  5. Pour the mixture into your prepared pie plate and bake 35-45 minutes or until the eggs are set completely.
  6. Let cool for a few minutes before cutting.
  7. Plate and ENJOY!
