Peanut Butter Chocolate Chunk Cookies

Prep time: 15 minutes

Cook time: 9-12 minutes

Materials:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • Pinch of salt
  • 1 cup unsalted butter at room temperature
  • 2 large eggs at room temperature
  • 2/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 3/4 cup peanut butter or soy nut butter at room temperature
  • 1 tbsp. vanilla sugar or extract
  • 1 1/2 cups semisweet chocolate chunks

Process:

  1. Preheat the oven to 350 degrees F and line a baking sheet with some parchment paper. Set aside for later use.
  2. In a mixing bowl combine the flour, baking soda and salt. Mix and set aside.
  3. In a separate mixing bowl add in the unsalted butter along with the brown sugar and granulated sugar.
  4. Mix until combined and fluffy.
  5. Add in one egg at a time, making sure to mix well after each egg.
  6. Add in the peanut butter and mix until incorporated.
  7. Add the dry ingredients into the wet and mix to incorporate.
  8. Using a spatula fold in the chocolate chunks.
  9. Using a small ice cream scoop, scoop dallops of dough about 2 inch apart.
  10. Bake in your preheated oven for 9-12 minutes.
  11. Let cool on a cooling rack and ENJOY!
