Materials:
- 2 cups all-purpose flour
- 1 tsp baking soda
- Pinch of salt
- 1 cup unsalted butter at room temperature
- 2 large eggs at room temperature
- 2/3 cup brown sugar
- 1/3 cup granulated sugar
- 3/4 cup peanut butter or soy nut butter at room temperature
- 1 tbsp. vanilla sugar or extract
- 1 1/2 cups semisweet chocolate chunks
Process:
- Preheat the oven to 350 degrees F and line a baking sheet with some parchment paper. Set aside for later use.
- In a mixing bowl combine the flour, baking soda and salt. Mix and set aside.
- In a separate mixing bowl add in the unsalted butter along with the brown sugar and granulated sugar.
- Mix until combined and fluffy.
- Add in one egg at a time, making sure to mix well after each egg.
- Add in the peanut butter and mix until incorporated.
- Add the dry ingredients into the wet and mix to incorporate.
- Using a spatula fold in the chocolate chunks.
- Using a small ice cream scoop, scoop dallops of dough about 2 inch apart.
- Bake in your preheated oven for 9-12 minutes.
- Let cool on a cooling rack and ENJOY!
