Materials:
- 6 bell peppers tops removed and cleaned out
- 1 lb. ground turkey
- 1 cup cooked jasmine rice
- 1 onion chopped
- 4-5 garlic cloves minced
- 2 cups tomato sauce
- 1/2 cup mozzarella cheese
- 1 tsp paprika
- 1 tsp dried basil
- 1/2 tsp marjoram
- 1/2 tsp sugar
- Salt and pepper to taste
- 2 tbsp. olive oil
Process:
- Preheat the oven 400 degrees F and lightly grease a 9×13 casserole dish with some cooking spray.
- In a skillet with high sides add in the olive oil. Keeping the heat on medium high add in the ground turkey.
- Cook breaking the turkey up with a wooden spoon until the turkey is cooked through.
- Add in the onion and continue to cook until softened.
- Add in the garlic and cook 60-90 seconds.
- Add in the the tomato sauce and mix well to incorporate.
- Add in the cooked rice and mix well to make sure everything is incorporated.
- Season with salt, pepper, paprika, marjoram and sugar. Mix well and set aside.
- Taking one prepped pepper at a time, scoop 1/6th of the mixture into the pepper.
- Continue doing this until all the peppers are stuffed.
- Top with mozzarella cheese.
- Cover with aluminum foil and bake for 30 minutes. Uncover and bake for an additional 8-10 minutes.
- Let sit for 5 minutes before serving.
- Plate and ENJOY!
