Stuffed Peppers

Materials:

  • 6 bell peppers tops removed and cleaned out
  • 1 lb. ground turkey
  • 1 cup cooked jasmine rice
  • 1 onion chopped
  • 4-5 garlic cloves minced
  • 2 cups tomato sauce
  • 1/2 cup mozzarella cheese
  • 1 tsp paprika
  • 1 tsp dried basil
  • 1/2 tsp marjoram
  • 1/2 tsp sugar
  • Salt and pepper to taste
  • 2 tbsp. olive oil

Process:

  1. Preheat the oven 400 degrees F and lightly grease a 9×13 casserole dish with some cooking spray.
  2. In a skillet with high sides add in the olive oil. Keeping the heat on medium high add in the ground turkey.
  3. Cook breaking the turkey up with a wooden spoon until the turkey is cooked through.
  4. Add in the onion and continue to cook until softened.
  5. Add in the garlic and cook 60-90 seconds.
  6. Add in the the tomato sauce and mix well to incorporate.
  7. Add in the cooked rice and mix well to make sure everything is incorporated.
  8. Season with salt, pepper, paprika, marjoram and sugar. Mix well and set aside.
  9. Taking one prepped pepper at a time, scoop 1/6th of the mixture into the pepper.
  10. Continue doing this until all the peppers are stuffed.
  11. Top with mozzarella cheese.
  12. Cover with aluminum foil and bake for 30 minutes. Uncover and bake for an additional 8-10 minutes.
  13. Let sit for 5 minutes before serving.
  14. Plate and ENJOY!
